Baked Sweet Potato Fries: Half the Calories, Half the Fat

You can make French fries with half the calories and half the fat of fast food fries. These sweet potato fries are awesome with a burger. Eat ’em while they’re hot. They’re also diabetic-friendly, gluten-free and heart-healthy.

Ingredients

  • medium sweet potatoes
  • Tbsp olive oil
  • tsp black pepper
  • tsp salt
  • Tbsp Parmesan cheese
  • Tbsp fresh parsley (optional)

Preparation

Preheat oven to 450°.

Cut sweet potatoes, with skins on, into french fry style sticks.

In a bowl, combine the potatoes, olive oil, black pepper and salt, tossing to coat all sweet potato fries evenly.

Place cooling rack on top of baking sheet. Arrange fries in a single layer on top of cooling rack. Sprinkle with Parmesan cheese.

Bake for 40 minutes, or until slightly browned and crisp. Garnish with parsley, if using, and serve immediately.
